Spicy Salmon Rice Bowl Recipe

Ingredients:

  • Salmon: Skin-on salmon fillets. You can also use chicken as a substitute if you don’t eat fish or tofu for a vegetarian option.

  • Olive oil

  • Seasoning of choice: I used onion powder, garlic powder, salt, and pepper. I also like to switch up flavors: jerk seasoning or gochugaru chili flakes or lemon pepper. WHATEVER YOU LIKE!

  • White rice: You can use whatever carb you like :) sushi rice could be great too.

  • “Power Greens” or any a container of leafy greens

  • Everything but the Bagel seasoning

  • Kewpie Mayo or regular mayo

  • Sriracha or not lol

    OPTIONAL

  • Avocado

  • Cucumber

    Instructions:

  1. Prepare your rice. I just used leftover rice from a previous meal.

  2. Season and Cook the Salmon:

    • I use a food thermometer for my proteins - for salmon, I personally prefer it cooked to an internal temp of about 150. I bake at 350.

  3. Prepare the Spicy Mayo:

    • Combine Kewpie mayo and Sriracha in a small bowl. Mix.

  4. Assemble the Bowl:

    • I start with the greens at the bottom. I don’t love big pieces of leafy greens so I use kitchen shears to cut them into smaller pieces. It’s easier for me to enjoy and everything mixes easier.

    • Add your rice on top - I did a 1:1 ratio of rice to greens but 1:2 is probably more desirable lol.

    • Add your salmon on top! I take a fork and shred up the salmon into nice size bits so it can all mix evenly.

    • Drizzle the spicy mayo sauce over the bowl.

    • Sprinkle with Everything but the Bagel seasoning.

  5. Mix it all up and Enjoy!

Feel free to customize your spicy salmon rice bowl with additional veggies or any other toppings you love. Bon appétit! 🍽️
