Ingredients

For the Matcha Latte:

  • 1 teaspoons high-quality matcha powder, ceremonial grade recommended

  • 1/4 cup or 60 mL of hot (not boiling) water (~175Β°F to 185Β°F)

  • 1 cup milk of choice (dairy, almond, oat, or coconut)

  • 1-2 teaspoons sweetener (honey, agave, or simple syrup) OPTIONAL

  • Ice

For the Ube Cold Foam:

  • 2 tablespoons (or more pending on your taste) ube sweetened condensed milk or ube extract

  • 1/4 cup heavy cream or plant-based whipping cream

  • 1 tablespoon milk of choice

  • 1 teaspoon sweetener (optional, depending on ube’s sweetness - condensed milk is already sweetened)

Instructions

1. Make the Matcha Latte:

  1. Whisk the Matcha: In a small bowl, sift the matcha powder to remove clumps. Add hot water and whisk with a bamboo whisk (chasen) or a milk frother until smooth and frothy.

  2. OPTIONAL - Sweeten the Milk: Combine your milk and sweetener, stirring until dissolved.

  3. Assemble: Fill a glass with ice, pour in the sweetened milk, and gently pour the whisked matcha on top to create a layered effect.

2. Make the Ube Cold Foam:

  1. Blend: In a frother or blender, combine heavy cream, milk, ube condensed milk or extract, and optional sweetener. Blend until it becomes light and frothy. (If using ube extract, start with a small amount and adjust to taste.)

  2. Adjust Consistency: If the foam is too thick, add a splash of milk. If too thin, blend a bit longer.

3. Combine & Serve:

  1. Carefully spoon or pour the ube cold foam over your iced matcha latte.
